Red and Green Calaloo, also known as Chinese Spinach or Yin Choy (Yin Choi三色苋菜), is a gorgeous amaranth that is popular in East Asia. Each green leaf is stamped with a burgundy red center, making it stand out in the field and on the table. Its young shoots are tender and smooth, perfect for cooked vegetables. The red pigment of this amaranth does not change color even after cooked, dying every ingredient in the same pot with a desirable red wine color. Therefore, it is excellent for soup and stew.
