Kailaan is tender and sweet for boiling; crispy and tasty for stir-fry. The Cantonese might have brought these vegetable seeds to California at the time of Gold Rush in the 1850s. No one could resist the crisp aroma of stir-fry Kailaan with ginger and rice-wine. Kailaan means flowering kale in Cantonese. Like all kales, Kaillaan is a nutritious leafy vegetable. Note that it is subject to Brassica (Cabbage) diseases & pests.
